I currently have a nikon N80 and want to purchase a flash. I also plan on
purchasing one of the nikon digital SLRs later this year.

Would the nikon SB-600 work with either camera? I am not locked into the
flash so any flash suggestions would be welcome. I would like to spend
under $200US.

The SB-600 will work with both cameras, but I think you lose one of
the exotic modes (multi-sensor balanced fill flash?) with the N80.

How does the Sigma EF 500 DG "ST" differ from the "super flash" version?

Mine says *EF-500 DG ST "NA" iTTL* on the back and that's the one that
works with the D70, so I assume it would also work with TTL, etc.. I
would call wherever you plan to buy it and make sure it's the one that
does iTTL if you want it for the D70, since there are two that carry
the same name except for a few different letters. I think they usually
state which it is in the ad, but call to be sure. Mine does a great
job on camera, but I've never used it off camera or as a
master/slave/wireless, so I can't help you with that.
