EVGA's backplate and high airflow bracket for the gtx580... How well do these work?

They will do very little for you. If you want better temps and/or lower noise, your best option is an aftermarket cooler.

Not much choice, really. The Arctic Cooling Accelero Xtreme would probably be the best widely available one.

That or the Prolimatech MK-13, but that one is freaking massive.

The Logisys Dracula looks pretty good as well, but I don't know what kind of fans it comes with, if any.
