Any thoughts on which case? Most of what I've read regarding the i5-2500 is that it`s a beast to overclock. Not sure if I`m advanced enough but even if I was wouldn't I need an aftermarket heatsink? I've also read that 8 gigs of RAM is generally overkill, any truth to that?

this cooler master case is only 45$
http://ncix.com/products/?sku=55447&vpn=RC-370-KKN1&manufacture=COOLERMASTER

also if youre not going to overclock, you can get the i5-2500 (non k) for 17$ more
http://www.ncix.ca/products/?sku=57963&vpn=BX80623I52500&manufacture=Intel

You can get the "k" version for 30$ more if you wish the try overclocking later. and yes if youre going to overclock, you have to get a good after market heatsink/fan which will be another 30$ +

you will probably never get close to using 8 gigs in gaming but some games use more than 4. When i play battlefield 3 my ram usage hits 5 gigs. Since ddr3 ram is so cheap, its worth it to get 8 gigs in my opinion.

I am not a fanboy of gSkill memory after having a bad experience with RMA - they're not the only ones. I see you picked a high-quality power supply so why are you scrimping on memory. Get the best memory and save yourself the reliability problems - you can't go wrong with Crucial memory.
Since you obviously not going to be overclocking, given your choice of CPU, switch to an Z68 Gigabyte mobo, very reliable and much cheaper. Your current choice is paying too much for a feature rich motherboard, for bells and whistles you aren't using :).
