I plan on putting together a computer that I can use for work but can also handle most games at decent settings. Below are the items I have in mind:

Motherboard: Asus P8Z68-V LE - $139.99 ---> http://www.memoryexpress.com/Products/MX34705
Processor: Core™ i5-2500K - $209.99 ---> http://www.memoryexpress.com/Products/MX31557
Video Card: HIS Radeon HD 6870 1GB GDDR5 PCI-E - $159.99 ---> http://www.memoryexpress.com/Products/MX35404
Power Supply: Antec High Current Gamer 620W - $69.99 ---> http://www.memoryexpress.com/Products/MX30457
Chasis: Antec Three Hundred Versatile Mid Tower Gamer Case - $49.99 ---> http://www.memoryexpress.com/Products/MX20934
RAM: GSKILL Ripjaws X Series 8GB PC3-12800 Dual Channel DDR3 Kit - $49.99 ---> http://www.memoryexpress.com/Products/MX33234
HDD: Seagate 500GB Barracuda 7200rpm SATA III w/ 16MB Cache - $79.99 ---> http://www.memoryexpress.com/Products/MX35469
Optical Drive: ASUS DRW-24B1ST 24x DVD-RW Drive, SATA - $24.99 ---> http://www.memoryexpress.com/Products/MX27707

Total: $784.92

Could anyone please advise whether this is a compatible and well-balanced system? If you prefer another component please refer from here: http://www.memoryexpress.com/ Otherwise, newegg.ca works too.

Thanks in advance

Crossfire is an excellent upgrade. In the future, when the current card starts to feel slow, it'll be much more economical to grab another than to get a single card as good as the pair.
I do support going with a more powerful card now, though, if you can find the space.
The Antec 300 is fine.

The mother board I listed above is crossfire compatible. Are you suggesting ones that are a better choice in terms of cost? Since I'll only be gaming moderately, do you advise I downgrade my mother board? Please refer to the ones from this list: http://www.memoryexpress.com/Category/Motherboards

I don't plan on using more than 1 GPU. So should I keep what I listed originally or downgrade? If so, which do you recommend?

Ok first of all:

The antec case is terrible, I would recommend this:

Also your hdd is terrible, high failure rate go with:

Great ram, your graphics if you have the money go with the 7870

The case you suggested goes beyond my needs, so should I go with the Cooler Master HAF 912 Mid Tower Case instead? Link: http://www.memoryexpress.com/Products/MX35637

As for the hdd, the one you suggested is not available in MemoryExpress. Should I go with the Western Digital 500GB Caviar Blue 7200rpm SATA III instead? Link: http://www.memoryexpress.com/Products/MX32264
