LGA2011 is better ONLY if:
- you need 64GB RAM
- you need triple/quad-SLI/CF
- you run extremely memory-bandwidth intensive programs
- you run massively threaded programs that can leverage a hex-core/12-thread CPU

For 99% of people, LGA2011 is overkill and completely useless since mainstream applications and games have no use for the extra cores, memory or memory bandwidth.

The same can often be said of i7's vs i5's for many applications. If you are simply gaming, an i5 is as good as an i7, the only difference between them is hyperthreading and a few MHz. Hyperthreading isn't really useful to games at all.

Simply commenting that you can save yourself a few more dollars on your build with an i5; however it depends on what you are doing.

For gaming get core i5, for 3d editing get core i7. There is no use of LGA 2011 cpus. The x79 MoBo will cost you a lot more for no more performance you needed. Spend the extra cash in a good GPU like GTX 680

The main reason for the socket 2011 processors are the high memory bandwidth that they have over the socket 1155 processors. The socket 2011 Intel® Core™ processors support quad channel memory. The socket 2011 processors also have 40 lanes of PCI-e over the 24 lanes on the socket 1155. So if you are looking for extreme SLI or Crossfire then socket 2011 might be your answer.
