Would this spec run games on Highest/Ultra graphics settings on a 23" 1920x1080p native HD display? : -

- Intel i7 2700K 4.Ghz-4.7Ghz LGA 1155 (overclocked)
- Single 3GB GDDR5 AMD Radeon HD 7970 graphics card
- 8GB (2x4GB) Kingston HyperX DDR3 1600Mhz Dual Channel Memory
- 850 Watt Corsair TX850 PSU
- ASUS Maximus V Gene motherboard.
- 2x120GB Corsair Force GT Solid State hard drives.

Would the above spec be future proof for 5 years provided I'm not going to play games at a higher resolution? Thanks!

i5 would be fine for gaming
Just get 1 SSD and 1 HDD; SSD for boot drive, HDD for storage
Its hard to predict the future but yes it should last you a while. As for how long, I don't know.
