You have 3 x GTX560 Ti cards in 3 way Sli and have it backed with a stock clocked FX8120? Not sure if a troll thread or not.

You are going to need to overclock that 8120 as far as it will go to not have a massive CPU bottleneck. Even then it's going to bottleneck the only question is how much. I'm not even sure the 8120 at 4.6Ghz would not bottleneck a 2 x GTX560 Sli system.

Either way that CPU is not a good choice for gaming and will be what limits you. Some games are just CPU bound and in those games you will not have good performance.

This might be an troll thread, he mentionned an 8 Core CPU, while most people think that more cores they are, better it is. But in fact, You don't even need an i7, FX or Phenom II CPU for gaming if you don't have Dual Cards or the new HD 7970.

An stock Athlon x2 can do pretty well in "performance" gaming, but definitively not in the enthusiast level...

But in case this isn't an troll thread, yes you can run almost any game maxed out and above 30 Fps. Even an single card like the 7970 can achieve that.
 

The 448 core 560Ti's are 3-way SLi capable but they only 1.2GB cards, I was not aware that the standard 560Ti's were capable of 3-way SLi. Any chance of a picture?

Isn't LA Noire capped at 30 FPS? Anyway yeah you should be able to max it out. That CPU with those GPUs is a weird combo though. You'll get a bottleneck somewhere down the line, probably not with this game though.
