First build is

Will mostly be used for gaming on high settings.

I also will need a monitor to upgrade to (right now ill be connecting it to my HDTV) but im not sure what a good monitor is, and is the 850w PSU enough for 2x gtx 580's?

if its a new build look at GTX 680/670/690 instead of the 580.. more performance, less power and heat.

x79 vs z77 and sandy vs Sandy E and you left out IVY?

for a new Gaming build, I would go with Z77 and Ivy (i7 3770K) for the PCIe 3.0 in conjuction with the GTX 690/680/670 GPU's and there isn't much of a price premium over Sandy. Sandy-E is just too much $ for gaming with no real return.
