First system, need opinions

Hey everyone! I'm planning on building a new system soon and this is what i've come up with:

Case:COOLER MASTER HAF X Blue Edition
Mobo:ASUS SABERTOOTH Z77 LGA 1155
GPU:SAPPHIRE Radeon HD 7970 OC 3GB
PSU:CORSAIR Professional Series HX850
CPU:i7-2700K SB OR i7-3770k IB
RAM:CORSAIR Vengeance 8GB (2 x 4GB) is 8gb fine or should i go with 16gb to be safe?
HDD:Seagate Barracuda 1TB 7200rpm 64mb cache
Burner:ASUS DVD Burner

I want to be able to run BF3, SC2, Diablo 3, etc. maxed out at 1920x1080 at around 50-80fps and maybe at medium/high settings in eyefinity at 40fps minimum. Will one 7970 and the rest of the system be able to pull it off? If you have any suggestion please share them :). Thanks guys! :D

THG shows what some of the high GPU do in Wide Screen (Eyefinity/nVidia Surround)
the 7970 is bench marked as a single and in CF.

So, yes you are fine at med-high in Eyefinity and MAX @ 1080p in everything currently on the market that gets benched.

8GB of ram is fine unless you just have mad money to spend.

you might as well go with IVY for the CPU since its a new build.

Thanks for your response :). One more thing, is water cooling REQUIRED to oc the IB to around 4.6ghz? or can i use a nice cpu fan like a Noctua NH-D14 or coolermaster hyper 212. What other cooling solutions could you guys recommend for both water and air cooling?
