I'm putting together a monster..any advice?

Hi all,
I do a lot of programming, video editing and need something that can basically run the whole Suite of Adobe Products, mainly - Flash, Dreamweaver, Premier and Photoshop - all CPU intensive software packages so I am looking for the best of everything.
Here is what I came up with. Any advice as I am not familiar with hardware as much as software.

How about monitor setup? Just a single display, or are you looking to run multiple? The i7's will definitely help with running all the programs. 8-16GB RAM, I haven't looked at them closely, but I'm not sure if AMD or NVidia would be better to encoding help.

Multiple monitors eventually. I hear great things about both AMD and NVida. As far a CPU's after much reading Intel Ivy Bridge seems the best. Any advice anyone has on Graphics Cards? I'm trying to order the best of the best...thats a first :)  And thanks Sinister for getting back to me!

Best bang for buck on the high end is the 670 from NVidia, but they're in short supply right now. What I don't know about is if your software can take advantage of CUDA for processing video. If it needs compute power, then AMD will be a better choice, like the 7950 or 7870.
