I settled with GTX 580 for my first gaming computer. It has 3GB VRAM so it should be good for a few years. My question is; Should I get two identical graphics cards of slightly less power instead of a single GTX 580? Is there an advantage to having two video cards?

I recommend getting the 580. Two cards are useful if you have old cards. Like a 470.

If one dies, you have a backup card.
