If AMD overdrive works with your motherboard, use that to get core temps and figure out which temp on HWmonitor matches the core temps. Video games won't use 8 cores for the foreseeable future, and Phenom II's are faster clock for clock. For video games, I would consider "locking" the CPU and seeing if you can get a higher clock speed with your overclock.
