Multiple Graphics Cards or One Good One

I am building a computer for the first time.
I will be doing video editing and multitasking with productivity applications. I will have two monitors.
Should I put my money into multiple cheaper graphics cards or one really good one?
Cost is a concern but mostly I don't like to wait on applications so if I'm running a video in a window I still want to be able to be doing work in another window or on another monitor.

More about multiple graphics cards good
  1. I don't think you'd want to go for multiple cards here. Typically you pair up cards to increase 3d rendering performance.

Start with the best card & PSU(add extra power for SLI or Xfire) you can afford - then add another down the road.
