advice would be very much appreciated. Which server to go for a site running on Dolphin:

Intel® Xeon® E5-2620

6 cores 12 threads

2.00 Ghz

15M Cache 6.40 GT/s

2 x Intel® Xeon® E5-2609

8 cores 8 threads

2.4 GHz

10M Cache 6.40 GT/s

Would it be better to have more cores or more threads?

More about : cores threads

More cores, unless it's highly threaded, it's more likely to use more cores, and the second option is dual-cpu besides, allowing for some expandability.

Get the E5-2620s instead of the E5-2609s. That will give you 12 cores and 24 threads as well as support for faster bus speed (7.20 GT/sec QPI speed vs. 6.40 GT/sec) and faster RAM (DDR3-1333 vs. DDR3-1066) and a higher maximum clock speed (2.50 GHz vs. 2.40 GHz). The list price is about $100 per CPU more for an E5-2620 vs. an E5-2609. In general, any "basic" Xeon (one with a zero as the third number) is a very crippled CPU and usually not worth getting.
