Hi,
I've recently decided to build a gaming PC to save money and so I can be proud of it at the end. I want to be able to play high end games on the highest settings for years to come. I've done some research and this is the component list I've come up with.

CPU: Intel Core i7 – 2600k
Motherboard: Asus P8Z68 –V/GEN3 Intel Z68
Ram: Corsair Vengeance DDR3 1600MHz 16GB (4 x 4GB)
Hard Drive: Seagate Barracuda 1TB (7200rpm, 64MB cache)
Power Supply: Ultra LSP750 750-Watt
Case: Cooler Master RC-430-KWN1 Elite 430
Video Card: XFX Radeon HD 7950 Double D Black Edition

Can you please advise me about how to improve this list (save money) or if anything isn't compatible.

Thank You in advanced,
Chris

Major i7 advantage is some parts of your video editing work would finish faster.
But the i5 isn't limited in any way to also getting the video work done.

Yes, a good 550W PSU will run any single graphics cards. Including the GTX 680.
