Would an Asus P8Z68-V LXG or a Gigabyte GA-Z68XP-UD3 be able to support two 7870s in crossfire? Would be using a i5-2500k, or do I need something more expensive - what are their limitations? Thanks.

Yes all of them support Crossfire.

P8Z68-V LX this one will have some performance issues due to the 4x slot pci express. minimum for a good performance is motherboard with 2x pci-e slots working at 8x

The asrock @hellfire24 linked is nice because it is Gen3 already with PCI-e 3.0 what gives no difference for now but maybe in future you change your CPU to an ivy bridge what should give you some performance using 3.0 pci-e slots, it is indeed a good option.
