Advice on best 5 series card

I am putting together a new build and I am stumped on what graphics card to get. I have around a $400.00 budget and I would like to stick with EVGA since I have good luck with them for so long. I cannot decide on if I should get two 560's or a single 570/580, or if those cards should be 2560mb. I play Skyrim with plenty of mods, BF3, Flight Sims etc.

I'd go with the single GTX 580. It's plenty for just about every game you might want to play at max settings.

After all going for SLI setup with 560 is not at all bad and will let you play every game at maximum setting for a quite amount of long time.

I also suggest going for a 580, I personally have 2 Gigabyte 580s in SLI that OC quite nicely. If you can manage to find one of those 3GB 580s that would be your best bet by far. I know it's a bit out of your price range but:

With the mail-in-rebate it'll set you back 480 bucks. Having more VRAM is a definite plus going forward with the increasing amount of vmemory needed for games going forward.
