2 builds for 3d modeling and gaming. which is better?

After a month of changing parts and research I have come down to two builds for mainly 3d modeling, rendering and video editing in mind. One based off of LGA 2011 and the other LGA 1155 with a ivy bridge cpu. I do plan to game with this pc as well. At the moment I have a 23 inch 1920x1080 monitor and will be adding another one in the near feature. Both builds will be placed into my corsair 400r ( I will be replacing it with a 600T around the same time I get the second monitor) and will be powered by a lepa 900w gold psu. So which build would you choose and why?

Build 1:
CPU- i7 3820
MOBO- ASRock X79 Extreme7 LGA 2011
RAM- Patriot Viper Xtreme Division 4 16gb (4x4gb)
GPU- Sapphire 7970 OC
Cooler- Corsair H100

Build 2:
CPU- i7 3770k
MOBO- Msi Z77A GD65
RAM- Patriot Viper Xtreme Performance 8gb (2x4gb)
GPU- Msi R7970 Lightning
Cooler- Corsair H100

3770k is faster
3820 is limited in OC,while the 3770k is not
3770k has full pci 3.0 support,while 3820 has limited
3820 can support more memory and pci slots on the right board
3770k requires much less power(77w vs 130w)
3770k will transcode video much faster as it has quicksync
3820 has 10mb L3 cache vs 3770k 8mb

So that is a run down of everything. Personally I'd take the 3770k,unless you need more than 2 pci x16 slots or need to support a ton of ram.

As far as ram,you should still get 16gb,but get these ones,so you can upgrade to 32gb in the future if neccessary.

Back to 680 vs 7970,I know 680 is better at gaming,and multi monitor support. But,in the programs you...

The second is better,though I'd highly reccomend a GTX 680 over that 7970.

Thanks, I have lots of time to wait so hopefully you will be able to explain in detail later. But from what I understand the main program I will be using which is blender is better using a 7970 vs a gtx 680. If I am wrong I will gladly change it, but thanks for your input. The differences in gaming performance between each card isn't that big of a deal to me really as Im really concerned about performance in blender, sony vegas, and whatever other programs I may have to use in the future. If I did go with the gtx 680, which card would you recommend?

Thanks for all of your help. Just to let you know I went and picked up the i7 3820, mainly because I plan to upgrade soon after to a 3930k. And I honestly was confused about the gtx 680 vs the 7970, so its great to hear it will be helpful with what I will be doing. I admit I am a big fan of Sapphires designs though, going to be my second card from them. Again thank you for your help.
