Advice on build

Hi guys,
I am going to be buying my new gaming computer next Monday and I want to know if there is anywhere I could save a little extra money on. I'm going to be buying from amazon.co.uk. My budget is <€1000. I'm going to be using it for gaming, surfing the internet and video editing ( nothing complicated ). There is no part I do not require as it is my first build. I have windows 7 so I can save a little there. I live in Ireland.

All of that is coming to about €1065 which is a little over budget and I don't have enough for a graphics card. I will when I have the money be going for a:

But if I was to buy that I would go way to much over budget. I will be buying it when I ahve enough money. I will in the future be going to two 7850 in crossfire.
My monitor resolution is 1920x1200. I must also leave space in my budget for a keyboard mouse and speakers.

Is there anywhere I could save money. I need the 128gb ssd and there is usb 3.0 headers on the case so I need them on the motherboard too. I will be overclocking. I want a silent computer which is why it is being water cooled and it is also why I am using the define r3.

What would be a better cooler for about €65 or cheaper that would cool and overclocked ivy bridge?
