Will two Gigabyte GTX 680's fit in a full size case on an ASRock Extreme 3 Gen 3? and is this Power supply enough to support along with a i5 2500K?

Yep, my mate is running (albeit temporarily) his two 680s on a 650w PSU with a 2600k. 900w will leave plenty of room to spare

And they should fit easily, they're dual slot cards, and that motherboard should run two triple slot cards in SLi/CFX. You'll be fine unless your case won't fit them, although most full-ATX cases will.

Thanks for the quick reply. That is reassuring. it would suck to order parts and they not be compatible.
