Here's my new system. I was wondering if 750W would be enough? I'm looking to add a new 670 in a month or so (SLi).

Yes, 750w is enough. A quality 650w PSU would also be sufficient.

If you're going to SLI 670s so soon why not just go with a GTX 680?

The Corsair PSU is basically a re-branded Seasonic x750, a very high quality PSU. While you are on the edge of needing more power for an SLI setup, I think you would be alright with the Corsair.
