How long will the GTX 560 last before upgrade is needed?

Note: I don't mind playing on a rather low resolution, BUT I don't want it to be terrible. It will be matched with an AMD X4 965 BE AM3 CPU and a Coolmax 750w modular PSU.

It depends on your expectations.

I am still using a Radeon HD 5850 @ 1920x1200 resolution. I don't plan on upgrading until next year when I upgrade my entire PC after Intel releases their Haswell CPU. That basically means I will keep my Radeon HD 5850 until AMD releases their HD 8000 series or when nVidia releases their GTX 700 series.
