I am wanting to know if I can get a gigabit connection if I have 100ft of cat5 coming from my fiber optic connection outside, to a wallplate connected to cat 6, connected to a gigabit switch, connected to my server with a gigabit pci network card? Any advice would be great.

a CAT5e cable will be able to provide Gigabit connection; however, if it is your internet connection that comes from the fiber optic, the speed of the internet is controlled by your ISP and is currently not much more then 100Mbit. most ISP deliver around 20 - 30 Mbit.

on your local network you will be able to take advantage of the Gigabit connection.
