Is there any possible way to run, say, one gtx 580 and still get three monitors? Can I use the motherboard's HDMI out for a third? Can I add a cheapo graphics card?

I don't game, I just want to use to 30 inch monitors and occasionally run HDMI out to my TV.

Am I stuck SLI as the only option?

That would be freaking awesome.

Apparenlty the Galaxy 580's advertise 4 monitor support and I almost bit on that, but I guess it's a just a wonky driver hack and not a real solution.

Most onboard graphics chips are disabled once a discrete GPU is populated on. Your Second opinion is the reasonable one.
