Every so often, when I am replying to a text message and I am ready to
send...the phone will ask for a 'center number' rather than just a
number ot send the message to. What is a center number? And how do I
get the phone to not ask for a center number?

It's probably the number of your provider's SMS message exchange center.
So, you have to ask your provider for it (it's probably on their website).

Any decent Service Provider will have it programmed in on the SIM card.
