Does anyone know if there is such a thing as a software program which can
control a digital camera to take photographs at set intervals? If so, can
you recommend one?

There are; but they'll be specific to your camera maker.
Even to a lesser extent the model.

The Canon S2 IS has this ability built into it.

Canon dslrs can be controled by a computer to do this.

As do many of the Nikon models including the Coolpix 8400 and most-likely
the 8800.
