Graphic card-mother board compatability

Hello,
will the new geforce 680/radeon 7970 be compatible on a x58 chipset motherboard? i havent been in the pc upgrading business but is looking to upgrade my aging radeon 5870

Yes. All PCIe Gaphics card is supported by the X58 chipset. But in any case, the 5870 is still a very decent card even by today's standard.

x58 chipset? Still performing excellently, x58 means high-end cpu's like intel core i7 9xx series, in this series there is no any problem by putting such a high-end gpu like gtx 690 or even 690 sli, don't bother x58 is the second group of fastest cpu's. Which could handle currently every sli or CF.
