I have constructed an AMD build and an Intel build. The cheaper AMD allows me to get a better quality GPU and motherboard. The Intel build has, well...an Intel processor. I had to offset the cost with a little cheaper MB and GPU.

INTEL BUILD ($688 –– $638 after rebates)
■Antec Three Hundred Black Steel ATX Mid Tower Computer Case ($54.99)
■EVGA 01G-P3-1460-KR GeForce GTX 560 (Fermi) 1GB 256-bit GDDR5 PCI Express 2.0 x16 HDCP Ready SLI Support Video Card ($179.99)
■Rosewill Green Series RG530-S12 530W Continuous @40°C, 80 PLUS Certified, Single 12V Rail, Active PFC ($54.99)
■G.SKILL Ares Series 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model F3-1600C8D-8GAB ($58.99)
■ ASUS P8Z77-V LK LGA 1155 Intel Z77 HDMI SATA 6Gb/s USB 3.0 ATX Intel Motherboard with UEFI BIOS ($139.99(
■Intel Core i5-3450 Ivy Bridge 3.1GHz (3.5GHz Turbo) LGA 1155 77W Quad-Core Desktop Processor Intel HD Graphics 2500 ... ($199.99)

AMD BUILD ($687.99)
■Antec Three Hundred Black Steel ATX Mid Tower Computer Case ($54.99)
■EVGA 01G-P3-1561-AR GeForce GTX 560 Ti FPB (Fermi) 1GB 256-bit GDDR5 PCI Express 2.0 x16 HDCP Ready SLI Support FPB Video ($244.99)
■Rosewill Green Series RG530-S12 530W Continuous @40°C, 80 PLUS Certified, Single 12V Rail, Active PFC ($54.99)
■G.SKILL Ares Series 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model F3-1600C8D-8GAB ($58.99)
■ASUS Sabertooth 990FX AM3+ AMD 990FX SATA 6Gb/s USB 3.0 ATX AMD Motherboard with UEFI BIOS
■AMD FX-4100 Zambezi 3.6GHz (3.8GHz Turbo) Socket AM3+ 95W Quad-Core Desktop Processor FD4100WMGUSBX (MB/CPU Combo deal--$274.98)

Any idea which would be better for mostly Photoshop, Illustrator, and InDesign (all from Adobe CS)...along with a little Skyrim on the side?

I'm a big fan of the sabertooth boards but the first build will future proof you longer with a Z77 chipset and a new ivy bridge i5. The difference between the 2 graphics cards is not enough to warranty the current price difference.... especially for mostly photoshop work which is not THAT intensive on the video card.
