Gaming computer ~1500, don't want to overspend for no reason though

Here's the preliminary build I have right now.

Budget is ~$1,500
I will only be gaming on it
I will be adding custom water cooling at a later date, in the mean time I need a suitable CPU cooler
I definitely want a GTX 680, Don't know for sure which model, recommendations would be helpful (do I need 4gb or is 2gb good, etc)
I definitely want the Switch 810 case so I can add water cooling later
I have no idea if my motherboard is any good, suggestions would be helpful
I have no idea if my PSU is way overkill
I won't be using SLI. I have 1 24" monitor, 1080p.. also it will be hooked up to my TV for games.. but I won't be using dual screens or anything
I'll want some stuff I can use for overclocking when I get around to water cooling
Is it worth upgrading to i7 over the i5 one I picked?
I definitely want to get the most out of my money but I don't want to spend extra hundreds of dollars on stuff I don't need (like a super fancy mother board, etc)

Drop to 8GB of RAM, which is already more than enough.
You're probably gonna need another hard drive in a addition to your SSD.
Your PSU is definitely way overkil; downgrade to this one which will be enough even if you decide to SLI in the future: http://www.newegg.com/Product/Product.aspx?Item=N82E16817139010&Tpk=HX750
It's not worth upgrading to the i7 over the i5 for just gaming.

great motherboard for the price

you do not need more than a 550 watt PSU to run that rig as spec'd now or a 650 (to overclock/volt the 680) or 750 (for sli in the future)

and please stay away from coolermasters; most of them are less than desirable. a seasonic, XFX, or corsair are much better.
you also may consider a GTX 670 for $100 less for 95% of the performance and use the money to buy a platter hard drive.
and as stated before you really need just 8 gigs of RAM to game.
