[Nvidia] 5760x1080 gaming on a 560 Ti

So I've got an I5 2500k, asus p8z68-v lx, and a Gigabyte gtx 560 Ti 1gb. I bought the GPU from microcenter and have the 2 year warranty on it so I could bring it back in and upgrade to a gtx 680 easily when the 680 comes out.

My question is will a pair of SLI'd 560 Ti 1gb's be able to run games like TF:2, Diablo III, and CoD 4 on 3 1080p monitors at 5760x1080, or should I trade in my 560 Ti for a 680 when they come out, and will a single 680 power 5760x1080 gaming?

A pair of 560 Tis will be more powerful than a single 680 for sure if you run a typical 1920x1080 setup. However at 5760x1080 resolution the 1 gb of memory on the 560 Tis might be more of an issue.
In an SLI setup the memory between the two cards is mirrored so you effectively only are able to use the memory on one of the cards. Memory is generally not a limiting factor on modern GPUs and games unless you use higher definition monitors or multiple monitor setups.
