What is your budget? And wats the make, model of that 600w psu?
There ain't any single gpu graphics card that can get bottle-necked by that CPU.

I would go with a gtx 670 since your playing current games. The gtx 670 has much lower power consumption than the gtx 580. The gtx 670 should also give you some legs if you replace that motherboard and QX95650 cpu down the road.

Take a look at this. The PCIE 1.1 x16 will limit a gtx 680 1.7 FPS. On a PCIE 3.0 x16 you would get 71.8 FPS and on PCIE 1.1 x16 you get 70.1 FPS in this BF3 test. I assume it would be slightly less a factor for a gtx 670. Non issue.

Just want to make sure you get enough power through the 12v rails.Good quality psu's deliver above 80% of their rated power through 12v rails.
Anyways the gtx 670 is the best bet for you, priced at $400 msrp.It performs on par with the 680 so it'll be best to get a non reference 670 like twin frozr 4 power edition from msi or others rather than a stock 680 @ $500 or above.
And as for the cpu,the kepler cards are far less dependent on cpu than fermi class gpus. While the processor you have can run a single gtx 580 with little impact on performance(but obviously the faster the cpu the the better fps).As for comparison -
