Will pretty much any USB devices such as scanners, printers, TV cards, mice, keyboards, ZIP drives, etc. work on a MAC system? Specifically, I have one of the new 500MHz G3 ibooks.

USB is a Standard. Which means that using any device is only a matter of finding the drivers.
