What one would you think would be better for gaming?

Neither, go with the 3570k. If you must have 8 threads, then go with the 3770K, its much more power efficient.

Well, efficiency doesn't matter. If you are an overclocker, the 2500K/2700K are much better to overclock - they don't run as hot as Ivy Bridge CPUs at higher clockspeeds like 5GHz.
