I'm buying this because I want to start running multiple game servers(for games like Counter Strike, L4D2, TF2, Minecraft, etc.). I don't know much about server systems so I don't know if I even need a server system or a regular computer. I've been looking at these. I won't be gaming on them I'll just be running servers. I have a different computers for gaming.

A lot of times, dedicated server machines have roughly the same requirements as their non-dedicated counterparts, minus graphics and input. Everything else is relatively the same. As far as graphics go, I'd see if any of the games you plan on serving can utilize a graphics card as a physics coprocessor. If so, a lower-level graphics card could prove useful.
As far as desktop vs server goes, I'd stick to desktop. For your uses, you likely won't notice much, if any, of a performance difference, and desktop parts should be cheaper and easier to come by.
That being said, since you posted this in the new build section, I'd recommend focusing on the processor, then an SSD or SSD cache drive, then RAM and GPU, as far as individual components go. Don't know enough of the individual specs for your games to pick individual parts that'd be best suited to your neds.
