Sacrificing some quality means no, not yes. A 7950 cannot max games on three monitors. As I said, it would probably take two 7970s. A single 7970 is better than a 7950.
I might be getting an eyefinity setup and i would like to know if a single AMD 7850 can handle games like: nfs: shift, anno 2070, etc..
depends on what settings you want to play at.

If going EyeFinity and its in your budget get a 7950 rather than a 7850. The extra gig of VRAM while seldom used now (I've only seen two games go above using 2 gigs of Vram) will help in the future, especially for an EyeFinity setup.
I run a 7950 and to answer your question NO a 7850 will get you NOWHERE near max performance in most games at EyeFinity resolutions. With my 7950 I can max some games, but for the majority of newer graphically intense titles I have to drop settings to get playable frame rates at EyeFinity resolutions.
