I would pick up
i5 3570k
new 2x4 8 gb ram
And i would upgrade ssd to samsung 830

YOU make the cal on SLI. If you sell anything, it should be the GTX560ti.

Put the cash toward a single card -- like the HD7950.

The i7 920 is still a powerful CPU. No reason to replace it. +1 to the 7950.

Your CPU and motherboard are really really good and you really don't need to upgrade them. The only thing you need to do is buy a good water cooler like this one
http://www.newegg.com/Product/Product.aspx?Item=N82E168...
And overclock your CPU as high as you can.You should be able to hit 3.8-4.4 GHZ.

Other than that your PC is pretty good BUT if you want it to get better you can more than double its gaming performance.
Just buy a new graphics card!

The first card i want you to look at is the the Powercolor PCS+ 7970 Vortex
http://www.newegg.com/Product/Product.aspx?Item=N82E168...
It will more than double your performance.

If thats a bit too expensive for you you should consider a GTX 670 like this one.

If even that is too much for you you should either buy a HD 7870.

Or another GTX 560 Ti so you can reuse the one you have.

Well i was thinking about water cooling it Ive got around £600 to spend. Its running 2.6 GHZ at the min. Also i don't think i could ALI it since the graphic card slots are so close together.

A Noctua D14 is one of the best air coolers. With LC'ing, it's all or nothing. Get a low/mid end kit will fail to keep up with a good air cooler. Just get the Noctua, sell your 560Ti, and get a 7950.

Ive got the earlier version of the Noctua - http://www.overclockers.co.uk/showproduct.php?prodid=HS...

Good air essentially works as well as water. If you want to go ultra-quiet you could also WC your GPU ...

but otherwise, hardly any difference.
