Just go for Windows 7 Home Premium. WinXP shouldn't be on new machines and Vista was...well, Vista. The only potential "benefit" from Win7 Pro is the XP mode, but as most games work with Vista an 7 anyway then it has to be a really old game not to work. Also, XP mode says it is for "business apps", so there's no guarantee it works well with games anyway.
