And Most Importantly, Why Are You Upgrading: Windows doesn't start every once in a while. Windows updates fail regularly. Sometimes system just gets really slow. (all of this still after a clean install) So I figure my parts are just getting old and worn out.

Asus sabretooth is a very good board, but expensive. OK, so long as you could get something just as capable, for a lot less.
Unless you are planing crossfire, your PSU is substantial oversized. 500W is adequate. Get 550 or 600W, for a bit in hand, but no point in any more. Smaller, of course, doesn't mean get lower quality. You want the same, or better quality.
If you want to overclock, you will need aftermarket cooler, stock one isn't capable of OC. A Coolermaster Hyper212 EVO, is a sensible choice.
