Hello i have a AMD Phenom ii x4 965Be and GTX 560!

Would it be worth the upgrade from a GTX 560 to a 7850? And would my CPU Bottleneck?

You would get like a 30% boost id say no not worth it, just overclock the560, unless you went for something in 7900 series

Yes it will bottleneck but not much like somewhere in th low 5% same as your 560 is bottlenecked

No bottleneck. But if there is, it can be dodged by overclocking your CPU.
