How do I calculate what damage I do to enemies? Do I look at weapon damage or my
damage including "power"? What exactly is "power"? Can't find any of this info
in my manual.

Sorry found it on page 46-49...but still don't really understand "power"

Look at your character screen and note your current agility, strength,
attack power, and damage per second. Then unequip an item with +agility
or +strength and check the numbers again.
