I read that a lot of people like skinning/mining as their primary
professions but if you pick them both, how will you make anything from what
you collect? Doesn't skinning need leatherworking and mining need
engineering, or do you just sell everything in raw form?

You make money by selling the raw ingrediants to people who need them.

I would read GenericKB's excellent article on making money at:

My mage (alch/herb) could only afford a mount at level 42, as
could my priest (enchanting & tailoring - what an expensive
combination that turned out to be! Not recommended for the
frugal!). My skinning/mining warrior though, has been the most
profitable by far; she could afford to buy a mount at level 40
and still had 50g left over.

Skin everything you kill and put the leather up in stacks of 10
at a competetive price at the AH.

Smelt the ore you mine and put the bars, and all the stone and
any gems you mined, up at the AH too.

If I'm selling something at the AH I always look to see what the
competition is selling the same item for, then undercut them
*slightly* (unless their price is *way* too low, in which case I
buy it myself and re-sell it) . Sure, it means you might not be
making quite as much money as you could if you listed it for a
higher price, but this way you almost never have unsold stuff
(which means you don't need to pay to re-list the items at the
AH).

They're suggesting selling, although mining can also go with
blacksmithing.

It seems that there's enough of a demand that one can sell raw materials
to the producers. I imagine that, if enough people hop on this, the
pendulum will eventually swing and you could take two production
professions. That's a ways off, though.

Because "making things" tradeskills are a money sink whereas "harvesting"
tradeskills generates money.

If you really want to be poor, take two "making things" trade skills and no
"harvesting" ones at all.

Skinning/Leatherworking is a good starting combo to get a leg up in the
game, unless your a paly. Paladins really need a good reason not to go
engineering to gain some ranged attack options, and mining pairs well with
engineering.

Correction: Skinning/Mining is the good starting combo.
