Should match or beat them. But most would advise getting a stronger single-card to avoid the hassles of XfireX. (Microstuttering, game compatibility, driver support)

you need a good cpu (dual core not advised), good mobo with at least two pcie x16 slots for cfx/sli, a strong psu to run two cards. vp450 is an entry level psu better suited for a single card setup.
it's not a good idea to start with entry level cfx/sli combo. better to go with single powerful card in the begining and if budget permits, add one more down the road.
iirc 7750 cfx would perform close to single 7850 (check tweaktown.com benchmarks). 7850 outperforms gtx 560.

Two 7770's basically sit somewhere between a 7850 and 7870 performance, not designed to be strong cards.

an i5 will put more pressure on a vp 450, even more if/when overclocked.
here's techpowerup's performance summary of gtx 560 256 bit (msi twinfrozr ii)
http://www.techpowerup.com/reviews/MSI/GTX_560_Twin_Fro...
and of radeon hd 7850 (reference card)
http://www.techpowerup.com/reviews/AMD/HD_7850_HD_7870/...
they used the same test setup. difference is in driver version - 7850 uses newer catalyst drivers.
which 560 did you mean? there is a 192 bit and a 256 bit version.
