I don't know much about digital cameras.
Have had fun looking at ‘7dayshop.com'
Ones I am considering: 'Canon Powershot S500' 'Canon Powershot S1 IS"
"Canon Powershot S60"
Looking at the ones I like they appear to have many functions, which
while clever and nice to have, I find I would never use.
I am willing to pay up to about £300 at a pinch, but I only want a
good digital camera which can take good quality pictures (5-6 mil
pixels), and is auto focus, with very few manual controls.

You need to consider other brands as well, although most Canon cameras are
good in their class.
Of the ones you listed, I would choose the S1 IS because of the image
stabilisation - it will help reduce any camera shake you might have.
However, it is "only" 3.2MP, but that may be quite adequate for you. How
do you intend to view your pictures?
