CPU, Motherboard & memory challange

Hey guys,

I've got a hardware challenge that I don't have the knowledge to answer.

I'm in a need for a new system and I am looking for a cpu/s, motherboard and memory solution.
I am running software's that will eat as much ram as i can give it. My primary processing is with giant LIDAR point clouds the other is giant imagery data sets... it is not uncommon to have 5,10 or even 15gb files. So ram is a major issue.

Second the software is bought in 100hr increments on a usb dongle... so I can't afford to wait around for things to process.
In the past I have explored two options.

1. an I7core overclocked with just 48gb or ram.
2. LGA2011 Xeon with up to 256gb of ram.

Up to this point its been one or the other... option 1 doesn't have enough ram and option two the core speeds are rather limited/turbo boost for only one core.

I don't know enough about the other Intel server processors and how they compare to the LGA2011 socket cpu's.
Can anybody give me a performance run down on why or why not to go with the LGA2011 cpu.

I was considering CPU Socket Type : Dual LGA 1366 as it can handle more ram albeit I not sure which kind is needed. It appears that these can be overclocked which and all cores run at that speed. The Intel Xeon W3680 Westmere-EP 3.33GHz LGA 1366 130W Six-Core Server Processor can be had relatively cheaply at $619
Any thoughts would very helpful.
