Currently I am using a Geforce 8600 GTS. I am planning on upgrading to the Geforce GTX 560 (Fermi). I am wondering if anyone has the percentage increase in performance from my current card to the upgrade. Or if anyone can take an educated guess. Thanks in advance.

Yeah. Ive been upgrading my components one at a time. Graphics card was last.

Case-Rosewill Blackhawk Midtower
Power Supply-SeaSonic X Series 650W (can also use my older Thermaltake 800W)
Memory-GSkills Ripjaw X Series 8GB
Motherboard-ASRock P67 Extreme4 Gen3
CPU-Intel Core i5 2500k 3.3Ghz

I've had 8600 GT in my machine, and when I built my new PC I compared graphics performance (my new PC has GTX 560 Ti). It was 8-9 times faster than 8600 GT. In games that I used to get around 30 fps, on same settings and resolution with my new card I get around 260.

Since GTX 560 Ti is around 15-20% faster than GTX 560, you'll still see around 7 times more performance ;).
