So, I never thought I'd be asking this, but my computer almost crashed trying to run NFS The Run on mid-high settings because my CPU wasn't strong enough and had overheated. I found the best CPU for LGA 775 (which, I really can't change:) The Intel Core 2 Extreme QX9650. My question is, will it work properly on a 300W PSU?

Current Specs:
Inspiron 560 018D1Y Mobo
Intel Pentium Dual Core E5700@3GHz
EVGA Nvidia GeForce GT 640 2GB DDR3
300w Stock Dell PSU

So, what do you guys think?

WHAT!? The extreme? Why on earth would you get THAT? They go for more than £800! You'd be able to make three systems, with that sum, that would leave the extreme utterly destroyed.

Most likely, your CPU is configured in the Bios to "Auto". You'd do best to manually change the settings according to your CPU specs; had the same problem with my E6700 in Crysis.

If you want more oomph, however, it is time for a new system. There is faster, quieter, cooler and all-round better CPUs that are many times cheaper than the Core Extreme CPUs. You'd still save a load of money if you replaced the whole computer, rather than buying the extreme.
your cpu did not overheat because it was not strong enough.

you'll be ok, but it's probably not your problem, in effective cooling is why it overheated, that might cause a crash although probably just a slow down.

do you have any fans at all in your case?

alot of factors that i'd have to guess at but my guess it is this: your video card power requirements
System Requirements Minimum of a 350 Watt power supply. (Minimum recommended power supply with +12 Volt current rating of 20 Amps.)
pay attention to the amps as this is most important and you can not run short on that by any margin with out problems

you can try a new PSU that is 400W

but if it's not that then maybe your cpu fan might be dying (but because it's a dell i doubt it has one right on the heatsink for a 775 socket board), the psu fan might be dying, or the new 640 video card is dumping more heat into your case than what the dell set it up to deal with as far as heat it produced.

dells fans aren't really known for exhausting hot air that well as much as they are there to be quiet as possible while exhausting what ever heat issues the factory set up will produce.

the cheapest solution would be to change out the 2 120mm dell fans for something that exhausts 50 cubic feet per minute (CFM) or more at 20 decibels or less (db) like this one http://www.newegg.com/Product/Product.aspx?Item=N82E16835103060
and also one mini 40mm one for your black northbridge heatsink

if that still isn't enough you can throw on a new spu heatsink and fan combo that moves alot of air like this one which moves alot of air and is still fairly quiet :

if your PSU is dying well you'll need a tester http://www.newegg.com/Product/Product.aspx?Item=N82E16899261023.

also, @DarkSable, It's because finding a LGA1155 or 1156 or 2011 Mobo is easy, but replacing it will take up too much time, which I don't have.
