I have seen presenters displaying their Nokia 6600 phone screens via
bluetooth to their laptops - and then project the screen onto a wall using a
data projector.
They are obviously using some kind of emulator that gets keystrokes either
from the phone (which are sent to the laptop) with bluetooth) or directly on
the laptop.
Where can I get this emulator so I can demonstrate my phone applications in
this way?

Remote S60 would get it onto your laptop, so hook the projector to the
laptop
