I am going to be building a gaming PC soon but I'm not sure what to get. Its either the EVGA 025-P3-1579-AR GeForce GTX 570 (Fermi) HD 2560MB 320-bit GDDR5 PCI Express 2.0 x16 HDCP Ready SLI Support Video Card (link http://www.newegg.com/Product/Product.aspx?Item=N82E16814130687), or 2 EVGA 02G-P3-1559-KR GeForce GTX 550 Ti (Fermi) 2GB 192-bit GDDR5 PCI Express 2.0 x16 HDCP Ready SLI Support Video Card (link http://www.newegg.com/Product/Product.aspx?Item=N82E16814130652). Which should i get 2 gtx550ti or 1 gtx570.

without a doubt: 570!

edit: shame on me for not checking the cards listed until sunius replied. i'll agree that the specific 570 is too expensive. however since i am not overly confident with a 660ti, i'd suggest a 570 with 1280 Vram for $100 less.

Those two setups will be similar in graphics power, but single GTX 570 has more VRAM, and will not have issues associated with multi GPU systems. Furthermore, getting one powerful card means you will be able to upgrade in the future by adding another one, and by going SLI from the start you will not be able to do that.

That said, I recommend GTX 660 Ti. It's faster than GTX 570 and cheaper than the one you linked:
