If i had to get a GTX 560ti, which one should i get? Which one would give me great FPS on high settings during BF3,Batman Arkham City, and other graphic intensive games. Which one would be the best for OC and SLI?

The MSI Hawk is probably the best all round card for what you want. Its basically designed for over clocking The gigabyte SOC version is also good.
Mactronix :)

What price are you looking at? Are your options specifically limited to a 560 TI? Let us give it a look, maybe there are better options than a 560 TI for you.

I'm looking to get the most bang for my buck. I'm willing to go up to about 350 but would like to stay in the 280 range if possible.

If that's $280 USD as your preferred budget, then a Radeon 7870 is a great option. It's faster than a 560 Ti and uses similar amounts of power. Their MSRP is $249.99 and you might find a few 7870s below that. The 2GB of VRAM on the 7870 versus 1GB (except for the rarer 2GB 560 Ti models) on the 560 Ti is also a considerable advantage, even at 1080p.

Will a 7870 give me decent FPS on BF3 and such?

At 1080p, it will give you great FPS so long as you don't try to load up the AA and such. Maxed out texture quality shouldn't be a problem at all.

Will this SLI'd be better than the 7870?

They're fairly similar in performance, but the 7870 would use a lot less power than two GTX 560s and should be cheaper than two GTX 560s. The two 560s are also more likely to have stutter problems.
