Reading the uberthread and the "how to make fall a man" thread just
makes me very interested in Mage. And above all, in discussing which
spheres should be used and how, how paradox works, in fact, all the
things which create flame wars here :)

Don't Panic ! I don't want to raise new flames here (and maybe
not even participating in the current threads), just to be able to
speak with my friends, and share ideas. We're fairly polite to each
other, and able to discuss conflicting views without problem.

Which books should I read, so, for the best kwnoledge of Mage
Magical Theory ?

The core book and Storyteller's Handbook are probably the most
valuable. The Players Guides and Storyteller's Companion may
also help. The Book of Worlds and Book of Madness may provide
insight into cosmology and Paradox.

I'd recommend getting the different versions of the books. The
different core books often have similar points, but you'll find
their differences most useful. The older Book of Madness may be
more useful than the newer one, in terms of setting forth ideas
on Paradox, though your mileage may vary.

Most books on Mage will provide you with a little more insight,
but the obvious choices (core books/ST Handbooks) are probably
the most useful, overall.

The core book is the best foundation you'll get. It explains all of the
spheres and each tradition's relation to their sphere and others'. Not
to mention if you own the book, you'll be able to play the game, which I
highly recommend :)

I have done way too much V and W games to be interested in
Mage Cosmology :)

No, I'm really interested in "how the system works".

In fact one of my first goal is to understand clearly Entropy.
It seems my group is fearly restrictive on entropy, as I wrote about
in a previous thread. They fear that saying entropy (sphere 2) can
affect every probable things, it just means that entropy can do
everything, and you do not need any other spheres, ever.

So, before creating my new character (s : I want to create two, in
fact, 2 identical twins with all the "magical" stuff commonly
associated to twins ), I need to convince them of the common view of
Entropy. And if they still don't agree, my characters will just not
put dots in entropy, no big deal, and I won't be frustrated later :)
